Prime & Ember at Eastport is now officially open, bringing a signature steakhouse and cocktail bar to the new waterfront plaza in The Villages. Additionally, during our visit, the team invited us inside for a peek at the bar and shared a full copy of the dinner menu, including steaks, seafood, entrées, salads, sides and desserts.
Additionally, many residents have been eager for more dining choices in Eastport, and this opening adds another strong option.
However, the opening of Prime and Ember is expected to ease some of that demand, at least during the first few weeks.

Prime and Ember Eastport Is Now Open
Prime & Ember sits along Central Lake Drive in Eastport, just steps from the water and a short walk from Bellaire Executive Golf Course and Portside Coffee. The restaurant softly opened on November 10, and it already feels like a polished, special-occasion spot.
Additionally, the layout of the building feels open and inviting, creating a warm first impression.
At the same time, the space has the feel of an upscale steakhouse: warm lighting, dark wood, leather seating and a long bar that looks ready for pre-dinner cocktails or a nightcap after a round of golf.
Prime and Ember Eastport Dinner Menu — First Look
Also, the menu is larger than many expected, offering a wide variety of classic and contemporary dishes.
Then again, some dishes may rotate seasonally based on availability and chef updates.
Furthermore, the dinner menu is focused on steaks, chops and seafood, with plenty of shareable starters and a few pasta and vegetarian-friendly options. Here are some highlights from the full menu we photographed during our visit.
Starters (The Prelude)
Appetizers lean classic steakhouse with a few fun twists. Moreover, several of them are shareable and perfect for starting the meal. For instance, you’ll see options like:
- French Onion Soup — house-made with baguette, parmesan and gruyère.
- Lobster Bisque — cognac crema, lobster pieces, chives.
- Shrimp Cocktail (GF) — five jumbo chilled shrimp with classic cocktail sauce.
- Lump Crab Cakes — house-made with lemon caper aioli.
- Glazed Pork Belly (GF) — apricot glaze, pickled cucumber, carrots and leek.
- Smoked Salmon Cheesecake — a savory lemon dill cheesecake with smoked salmon and buttery cracker crust.
Signature Steaks & Chops
Next, the steak selections stand out immediately, especially for anyone who enjoys traditional cuts. Meanwhile, steaks are the star of the show. Each one comes with two sides and one of their house “ember essences” sauces, and is finished with Prime & Ember’s own maître d’ butter.
- Center Cut Filet Mignon (GF) — 6oz / 8oz portions.
- New York Strip (GF, Angus) — 12oz center cut.
- Cowboy Ribeye (GF) — 16oz.
- Double Bone Pork Chop (GF) — served at the chef’s recommended medium-well.
- Herb Crusted Rack of Lamb — half rack or full rack.
- Prime Cuts — Kansas City Strip and Delmonico Prime.
In addition, diners can choose enhancements like cold water lobster tail, brandied scallops, grilled shrimp and Crab Oscar style. Moreover, the menu offers classic sauces such as cabernet demi, bearnaise and Swiss & cheddar fondue.
Ember Entrées & Seafood
Besides the steaks, guests will find a strong lineup of seafood dishes. Beyond steaks, the Ember Entrées section offers a variety of seafood and composed dishes. As a result, there’s something for almost every taste:
Additionally, several seafood entrées include gluten-free options, making the menu more flexible for different diets.
- Confit Duck (GF) — with pan jus, rice and roasted carrots.
- Maple Glazed Chicken (GF) — wing bone-in chicken breast with creamy butternut sauce, bacon, rice and super greens.
- Herb Salmon (GF) — baked salmon with Argentinian herb sauce and chorizo maque choux.
- Scallops Epicurean (GF) — seared golden with garlic mashed potatoes.
- Grouper Imperial (GF) — topped with lump crab meat, lemon-caper sauce, rice and roasted carrots.
- Filet & Shrimp Fondue (GF) — grilled filet medallions topped with jumbo shrimp and four-cheese fondue.
- Twin Lobster Tails (GF) — butter-basted cold water lobster tails with rice, asparagus and drawn butter.
- Seafood Pappardelle — jumbo shrimp and scallops over pappardelle with lobster cream sauce.
- Mushroom Florentine Ravioli — cheese ravioli with spinach, blistered tomatoes and white wine mushroom sauce.
Cultivated Greens, Sides & Desserts
In fact, the menu continues to expand as you move into salads and side dishes. Likewise, the salad and sides section includes pancetta Caesar, a classic wedge, chopped salad and a fig & prosciutto salad, with options to add chicken, shrimp, salmon or scallops. Sides cover the steakhouse staples: baked potato, garlic mashed potatoes, seasoned fries, creamed spinach, asparagus, carrots and herb roasted mushrooms.
Finally, for dessert, look for Crème Brûlée, New York cheesecake, mocha tres leches and a s’mores brownie with toasted marshmallows and cherry-smoked vanilla ice cream.

Our First Impressions
Importantly, the early feedback from visitors suggests the restaurant is already drawing strong interest. Overall, from the early look, Prime & Ember feels like a welcome addition to Eastport and The Villages dining scene. Consequently, the interior has a polished, special-occasion vibe, the bar looks like a great spot for cocktails, and the menu is loaded with steakhouse classics plus seafood and creative entrées.
